Sweet Potato Pie 2 large sweet potatoes 2 egg whites, beaten 1 tablespoon sugar 1/4 cup raisins (optional) 1/2 teaspoon cinnamon 2 tablespoons low-calorie margarine 1 cup low-fat milk 1 9-inch ready-made pie crust Wash the sweet potatoes. Boil the sweet potatoes in a covered saucepan until soft. Peel the potatoes and mash in a medium sized bowl. (You should get about 1-1/2 cups of mashed potatoes.) Preheat the oven to 450-degrees.
