Spicy Hard Tofu Veggie Soup


8 cups Vegetable stock
2 tsps Louisiana hot sauce
1 cup Green onions, chopped
2 cups Sliced Cabbage
2 cups Chopped Potatoes
1/2 cup Celery, chopped
Salt, to taste
1 tblsp Garlic, diced
1/4 cup Cilantro, chopped
2 cups White wine, dry
1 lb Hard Tofu chunks
10 dried Chiles de Arbol w/o stems
extra water if needed


This is a Gluten-Free Vegetarian dish:

Make the Vegetable stock with water and vegetable
broth cubes or packets.

This recipe can be made milder by using only two
Chiles de Arbol instead of ten. The Chiles are
long dried thin skined chiles that are excellent
for soups. You don't have to eat the chiles if
you don't want to-- just use for flavoring the
soup.

Put ingredients, except Hard Tofu, in vegetable
stock. Bring to boil and then lower heat. Cover,
and cook for 45 minutes.

Add Hard Tofu chunks and simmer for 30 minutes or
more.

The flavor of the soup will seep into the Tofu.

Yield: 10 servings
